Japanese Tamagoyaki (Rolled Omelette) Recipe

Tamagoyaki is a Japanese rolled omelette made by cooking thin layers of seasoned egg in a rectangular pan and rolling each layer over the previous one to build up a multi-layered roll. The result is a slightly sweet, delicately flavored omelette with a tender, almost custard-like texture and a distinctive layered cross-section when sliced. It's a staple of Japanese breakfasts and bento boxes, and the technique is simple once the rhythm of rolling becomes natural. The egg mixture is seasoned with dashi, mirin, soy sauce, and a small amount of sugar. The dashi (Japanese soup stock) adds depth without overpowering the egg flavor, while the mirin and sugar provide the characteristic sweetness. The ratio of sweet to savory is a matter of preference — Kansai-style tamagoyaki is sweeter, while Tokyo style is more savory. Start with a small amount of sugar and adjust to taste. A tamagoyaki pan — the rectangular one — produces a neat rectangular roll, but a regular round pan works too with slightly less clean edges. Heat the pan over medium heat, brush lightly with oil, and pour in a thin layer of egg. When the egg is just set but still slightly wet on top, use chopsticks or a spatula to roll it to one end of the pan. Brush the empty area with more oil, pour in the next layer of egg, and roll the first piece back over it. Repeat until the egg mixture is used up. Cool slightly before slicing into rounds. Serve as part of a Japanese breakfast with rice and miso soup, or pack into a bento box alongside rice and vegetables.
