The 3-2-1 method is a reliable framework for beginners: 3 hours unwrapped on the smoker, 2 hours wrapped tightly in foil with a splash of apple juice or butter, then 1 hour unwrapped again with sauce applied. The foil phase steams the ribs and speeds up the softening; the final unwrapped phase sets the glaze and firms the exterior. The rub applied before cooking is largely a matter of preference. A simple mixture of salt, black pepper, paprika, garlic powder, onion powder, and brown sugar is a solid starting point. Apply it generously the night before and let it sit uncovered in the refrigerator — the salt draws moisture out and then back in, seasoning the meat more deeply.
